He'd be curbstomped. Even without Force abilities, Sidious is skilled enough with a lightsaber that the likes of Mace Windu barely managed to disarm him. In a fair fight Grevious wouldn't last long but if he can run around and what not then a bit longer but ultimately he can't handle someone like Sidious.

No. Grievous didn't know, and likely barely would have cared. Unlike palpatine and dooku who wanted power over the galaxy, grievous revelled in slaughter and butchery for their own sake.
